Add the values, then divide by how many there are.

Put the values in order and take the middle one. With an even count, average the two middle values.

18 is much larger than the other values. It pulls the mean up, while the middle value stays 3.

Why does one large number change the mean but not the median here?

The mean uses every value, so changing 18 to 28 raises the total by 10. The median uses the middle position: the third value is still 3. Watch what changes in the same example.
